Variety

100% Verdejo

In a year marked by drought and hot spells at the end of the summer, the rains close to the harvest time conditioned the start of the harvest and the harvest was harvested with more balanced alcohol levels. Rainfall close to harvest time meant that the grapes were harvested at a more balanced alcoholic content.

White wine made using a selection of bush vines from the D.O. Rueda grown at an altitude of 740 meters. The small, hand-selected bunches were collected in the morning, to take advantage of the cooler temperatures.

Elaboration

1

Pre-fermentative maceration took place in an inert atmosphere in tanks over two days.

2

The first press must from gentle pressing was fermented in small stainless steel tanks, at a controlled temperature of no more than 15ºC.  Once the alcoholic fermentation had finished, the process of lees stirring in the tank started.

3

This lasted for more than two months, with the objective of creating greater volume on the palate. Bottled and cellared for four months before release to round off and refine the wine.

Color

Bright straw yellow, with greenish reflections.

Smells

On the nose, it is very expressive and aromatic, displaying attractive and characteristic green notes of fennel and aromatic herbs, with citrus hints after aeration.

Taste

Very elegant and broad entry on the palate, with a plenty of well-defined fruit. It is complex, with lively acidity and some mineral hints on the back note. Long, persistent and very fresh.
